We roast in the Scandinavian tradition, which means lighter, more delicate roast profiles that preserve the natural flavors of the coffee rather than covering them up with dark roast char. The result is a cup that's sweet, juicy, and clean — a far cry from the bitter, one-note coffee many people are used to.
How We Source
Great roasting starts with great green coffee. We work with trusted importers who maintain long-term, transparent relationships with coffee producers around the world. Our focus is on fresh-crop, high-scoring lots from regions known for distinctive flavor profiles.
Our coffees rotate seasonally, because coffee is an agricultural product with harvest cycles. When a coffee is in season, it's at its peak — and that's when we buy and roast it. This means our menu is always changing, and there's always something new to try.
Regions We Source From
Our single-origin offerings typically include coffees from Ethiopia (known for floral and fruity notes), Colombia (balanced sweetness and caramel), Kenya (bright acidity and berry flavors), Guatemala (chocolate and citrus), and other origins as exceptional lots become available. Each coffee tells the story of its terroir — the soil, altitude, climate, and processing method that shaped its flavor.
Our Roasting Process
Every batch of coffee is roasted at our downtown Eugene roastery at 291 E 5th Ave. Our roasting approach is guided by a few key principles.
Small batches: We roast in small quantities to maintain consistency and quality control. No bulk production, no cutting corners.
Light profiles: Our roast development is carefully calibrated to bring out sweetness and acidity while avoiding bitterness. We monitor temperature curves, rate of rise, and development time on every roast.
Freshness: We roast to order and rotate our offerings frequently. The coffee you buy from us was roasted within days, not weeks or months.
Transparency: We share the origin, producer, processing method, and tasting notes for every coffee we offer. We want you to know exactly what you're drinking.
How to Enjoy Our Coffee
Our coffees shine in a variety of brew methods. For the fullest expression of flavor, we recommend pour-over (V60, Kalita, or Chemex), AeroPress, or a well-dialed espresso. Light roast coffee benefits from slightly higher brew temperatures and finer grind settings than you might use for darker roasts.
